Before Christmas AO.com challenged us to eat more vegetable meals. I’m a huge vegetable fan anyway, but cutting back on meat is brilliant for our shopping budget and so we decided to give it a try. They have plenty of inspiration in their vegetable cookbook, and so we are sharing some of our family favourites throughout January Kale chips are something I’ve wanted to try making for a long time but just never got around to it, and so after many trials, I finally created a batch that was so delicious that even Lyoto tried a chip or two, which is a miracle since he thinks that leaves are for insects only.
You can enjoy these chips as a snack – or we’ve taken to using them as a home made crispy seaweed when we have homemade Chinese food. So good.
I used sea salt in the recipe, but we’ve tried a general seasoning mix, chilli flakes and all kinds.
